Recipe Ideas: Banana Mix - Pecans & Coffee


Another week, another recipe featuring one of our Cake Mixes! We created each mix to be as customisable as possible and we want to show you all the things you could do with them! Today, we’re preparing a Pecans and Coffee Banana Bread using our Banana Bread Mix.

All of LELE’S Cake Mixes are vegan, gluten-free and nut free. Each recipe we create can be adjusted to your personal preference and dietary requirements, making it impossible for you not to like them!

Ingredients

-1 LELE’S Banana Bread Mix

-Sunflower oil

-Plant-based milk

-2 ripe bananas

-20gr of chopped pecans

For The Glaze

-Coffee

-Icing sugar

-Chopped pecans

Method

  1. Preheat the oven at 160°.

  2. Empty one of LELE’S Banana Bread Mix into a bowl and add sunflower oil, bananas and plant-based milk following the instructions at the back of the box.

  3. Roughly chopped 20gr of pecans and add it to the mix.

  4. Pour the batter into a loaf tin and bake in the oven for about 50 minutes (remember to check with a toothpick if the centre is done before taking the banana bread out!).

  5. While the banana bread is baking, let’s make the glaze! Brew some coffee or mix some instant coffee with some hot water.

  6. Mix the 1 tbsp of liquid with 1 tbsp of icing sugar and keep adding both ingredients a little bit at a time, until you have the consistency and quantity you need.

  7. Roast the extra chopped pecans in a pan with a little bit of maple syrup.

  8. Once the banana bread is ready, let it cool before adding the icing sugar and the roasted pecans on top!
