Recipe Ideas: Lemon & Blueberry
Despite the difficulties we’ve all been facing and the changes we had to adjust to, 2020 has been an exciting year for LELE’S. We started focusing on wholesale and catering events, making your day a little more special with bespoken vegan cakes and sharing our love for good food with everyone.
But the biggest accomplishment was the launch of our Vegan Cake Mixes. It was hard work — each of LELE’S Mixes was packaged in our laboratory in East London by our amazing team. And it was also so, so rewarding.
LELE’S Cake Mixes are all gluten-free, vegan and nut-free. They’re also customisable with your favourite flavours and can be made in such pretty treats for all occasions! We’re often asked what you can do with them and the possibility are truly endless. So, we decided to share a few recipes you can follow along after grabbing one of our Mixes!
Today, we have a delicious gluten-free vegan lemon and blueberry cupcake recipe! All you need to start with is LELE’S Vanilla Cupcake Mix, which you can purchase on our online store or at your local Planet Organic!

-1 LELE’S Vanilla Cupcake Mix
-Apple cider vinegar
-A handful of blueberries
-Zest of 1 lemon
-Juice of 1 lemon
For The Glaze
-10ml of lemon juice
Preheat the oven at 160°.
Empty one of LELE’S Vanilla Cupcake Mix into a bowl and add sunflower oil, apple cider vinegar and plant-based milk following the instructions at the back of the box.
Blend together until smooth before adding a handful of blueberry, lemon zest and lemon juice.
Scoop one tablespoon of batter in each cupcake shell and bake in the oven for 15 minutes.
While the cupcakes are baking, let’s make the glaze. To start, mix 1 tbsp of icing sugar with 1 tbsp of lemon juice. Keep adding the sugar and the juice until you get the consistency and quantity you need to cover all the cupcakes.
After the 15 minutes are passed, insert a thin skewer in one of the cupcakes to check if they are cooked through. If the stick is dry, the cupcakes are ready!
Wait for the cupcakes to cool completely before adding the glaze on top. You can spread the glaze over the cupcake with the help of a butter knife. Bring the cupcakes to your friend’s party, to enjoy on a picnic in the park or while you’re watching your favourite program (we all have those days!).
