Roasted Mushrooms and Chickpeas

Sorry folks we haven't posted a recipe for a little while, as we've been incredible busy with catering jobs - summer time gets pretty intense with weddings and parties. Anyhow, we have also been busy testing new recipes and cooking yummy dishes for you in the cafe using seasonal ingredients and lots of love - as usual. 

 

Here is our recipe for this super quick easy to make meal. You may have tasted it at Lele's - many of you asked me for the recipe so here it is!

 

Mushrooms and chickpeas are packed with nutrients, and very filling. These two ingredients are perfect for those following a plant based diet wanting to ensure they're getting their protein. If that wasn't enough they are easy to cook and very versatile. Here I roasted the mushrooms with garlic and thyme and separately I roasted the chickpeas with maple syrup, salt and paprika to give them a smoky aftertaste - then I mixed everything together into a hot frying pan and cooked them for another 10 minutes. 

 

If you are looking for an easy to prepare meal I would definitely recommend this, it literally took me 30 minutes in total. As you are using the oven you don't need to stir them or anything like that, you can literally go and do something else while they're on - when I get home late from work, I sometimes chuck them in the oven and tidy my flat or do some (more!) work while I'm waiting for them to get ready. 

 

If like me you need some carbs with every meal you do (I know, don't start) then add some brown rice as a side. The dish usually turns out very juicy so it's nice to mix some rice with them, even bulgar wheat would work really well. 

 

 

Mushrooms:

1 clove of garlic finely chopped 

1 handful of parsley 

1 handful of fresh thyme 

 

Season them with garlic, extra virgin olive oil, salt, pepper and parsley - cook them in the oven for about 10 minutes, then add fresh thyme and let them cook for another 5 minutes, all at 180.

 

Chickpeas:

2 spoons of maple syrup 

2 spoons of paprika 

 

At the same time while your mushrooms are cooking, roast the chickpeas with a pinch of salt, 2 spoons of maple syrup and 2 spoons of paprika for about 15 minutes.

 

Then mix everything together in a hot frying pan for 5 minutes. Job done! Give them a go and let me know what you think! Don't forget to share your recipes with us using @leles_london and #LelesRecipes.
