Super Easy Vegan Picnic Ideas

With the last of Summer looming over us and the temperature rising one final time, what’s better than a vegan picnic in the park? We compiled a list of recipes from the blog to create the perfect picnic menu! It’s also great for garden parties or additions to someone’s buffet for when it gets a bit too cold to go outside.

To make your picnic more sustainable, remember to ditch the single-use plastic! Just bring some reusable plates, knives and forks, water bottles, and store your food in containers instead you can bring back home.

All the recipes below come from my Live #CookingWithLeles on our Instagram page. They all take under 10 minutes to prep, they’re all really easy and super yummy!

The Starter: Vegan Tartlets with Cheese and Tomato

These delicious tartlets are customisable with whichever ingredients you prefer. They require vegan puff pastry, which you can easily find in every supermarket nowadays (the Jus Rol one is vegan, and they also have a gluten-free one!).

The ingredients I used are very simple and it’s possible you already have them in your kitchen. But don’t be afraid to change it up and make them into your own version.

The Star: Vegan Chicken Curry Salad

I called this a vegan chicken curry salad, but you can easily add it to a sandwich and make it more filling and scrumptious. As the chicken part, I’ve used tofu, seasoned and grilled in a pan. If you’re not a fan (but I do invite you to give it a try first), you can replace the tofu with your favourite meat alternative.

The Classic: Vegan Flatbread and Hummus

Have you ever gone to a picnic without hummus? I think no one would dare. It’s actually been more times we had multiple tubs of hummus than none — it’s what everyone brings! But what if you could make your own hummus AND flatbread? This recipe is really easy to follow and again, it won’t take you more than 10 minutes!

The Drinks: Cold Brew Iced Tea

I hope you have a cooler to bring with you because we’re going to bring your own cold brew iced tea to this picnic! One of our food hacks will tell you exactly how to do that: you just need loose leaf tea, water and a pitcher.

LELE’S Vegan Vanilla Cupcakes

What is a picnic without a dessert? And cupcakes make the perfect treat to store in a container and share with everyone! No need to bring a knife, a fork or a spoon: you just need your hands. And because our recipe is gluten-free, nut-free and vegan, you’ll be able to please everyone!

Grab one of LELE’S Vanilla Cupcake Mix and get ready to be creative! Follow our guide on how to personalise it with your favourite frostings and flavours.

And now let's enjoy whatever is left of this summer :-)
