Vegan Sausage Rolls: 10 Minutes Prep Video


Did you know last week it was International Sausage Roll Day? Well, me neither. But it’s a great excuse to watch my latest 10 Minute Prep video when we’re making — you guessed it — vegan sausage rolls!

So, let’s talk about this recipe. Vegan sausage rolls are the perfect treat to bring with you to a picnic in the park! As per usual, they’re really easy to make and they’re completely customisable. I will be using certain ingredients, but you can change them with whatever you want.

Ingredients:

-Cavolo nero, cooked in a little bit of olive oil

-Pinto beans, straight from the tin

-Lentils, straight from the tin

-Tomato paste

-Paprika

-Extra virgin olive oil

-Salt

-Toasted sesame seeds, with salt and chilli

-Jus-rol puff pastry, taken out of the fridge 10 minutes before starting

-Some flour to dust the surface I’m working on

Method:

  1. Dust your work surface with some plain flour

  2. Roll out your puff pastry, I’m making a rectangular shape. No rule about how thick it should be, mine is pretty much as thick as a coin

  3. Mix the beans, the lentils, some salt, the cavolo nero together. Use some tomato paste to make the mix moist and stick together. Use your hands to squeeze the beans and make it come together.

  4. Place the mix in the middle of the pastry.

  5. Wet the edges of the pastry with a mix of paprika and olive oil.

  6. Fold one of the longer edges of the pastry over the bean mix. Then, roll it over once and fold the pastry that’s left over one more time. Don’t be afraid to use the olive oil — that’s your glue!

  7. Cut the pastry in smaller parcels to create the sausage rolls. Wet the outside of each piece with more olive oil and finally add some sesame seeds on top.

  8. Cook in the oven for 15-20 minutes at 180degrees.
