5 Minute Prep Vegan Miso Cookies

STOP EVERYTHING YOU’RE DOING. I got the best treat-yourself-recipe for you! I posted it just before my birthday in May, so excuse me if all I was thinking about was some sugary, delicious, easy-to-make cookies…

Don’t know if you noticed this, but weighing ingredients is not really my forte. And I’m not going to start now. These cookies are the best because you don’t even need a scale to make them! You’ll just need your head, your eyes and your hands to make these cookies work for you.

The main ingredients will be peanut butter and miso paste. Plus, this recipe will be gluten free to cater most of the people watching the live cooking-with-me (tune in every Monday if you want to participate!), but can easily be done with regular flour.


-Buckwheat flour

-Baking powder

-Brown sugar

-Oats (make sure they’re GF if you have an allergy)

-Caster sugar

-Dairy free butter or sunflower oil


-Peanut butter

-Miso paste


  1. Put some buckwheat flour in a bowl and add about a teaspoon of baking powder. Mix them together.

  2. Add about 3 tablespoon of brown sugar, 2 tablespoon of caster sugar, a pinch of salt and a tablespoon of oats. Mix them all together with a whisk, a fork or even your hands.

  3. Add about 2 full spoonfuls of peanut butter and 2 of miso paste. Stir them into the flour mix.

  4. This is the moment you need to look at the consistency of your dough. In the video on LELE’S IGTV, you can see me add some water as my dough was too dense. If you need water too, make sure to add only a little and mix it in well to soften the dough up.

  5. Add 2 tablespoons of dairy free butter or sunflower oil. Mix the dough again with your utensil or your hands.

  6. Again, check the consistency of your dough. It should be gooey and a little bit sticky, but not so much so that you can’t form some dough balls. Add flour, water or butter depending on what you need.

  7. Place a piece of parchment paper on a tray. Form dough balls and place them on the paper.

  8. Cook the dough for 8-10 minutes in the oven at 160degrees.

Don’t be afraid to be creative! Add your favourite spices, coconut, chocolate, salt or whatever you want. They’re going to be delicious! Try add some chocolate chips.
