10 Minutes Prep Vegan Gnocchi


I have to say, if you are missing our Instagram live you’re missing out! We’re having so much fun cooking together — well, at least I am! And seeing how you recreate my dishes really fills me with happiness.

I hope you’ll be able to join us next time (I do a live cooking with me every Monday evening, and I’ll tell you what ingredients you’ll need in the days before), but if you can’t remember that I will always post my recipe on my blog too!

Today, we’re doing vegan gnocchi. It’s gonna be easy and very quick: you’ll only need 2 ingredients! As usual, I don’t share specific measurements. However, know that with a 240g of potatoes and 120g of flour you’ll be able to serve about 4 people.

Ingredients for the gnocchi:

-1 boiled potato, skin on (I boiled it for about 30 minutes to make it as soft as possible)

-Flour (it can be gluten free, but you might want to add some olive oil)

Ingredients for the sauce:

-1 can of chopped tomatoes

-Some fresh basil

-Salt

-Pepper

-Chilli

Method:

  1. First thing, you’ll have to make the sauce. In the video, I had already prepared it, but it’s very quick. Just pour the can of chopped tomatoes in a saucepan with the rest of the ingredients (as much of each as you like!), and let it simmer for a while. You will see the sauce reduce and get thicker (I would say don’t cook it for more than 20minutes, but even 5 would be enough!)

  2. Take your boiled potato out of the water. The reason why it still has its skin on is not to let it get too watery. It also needs to be still hot, as the heat will act as a glue in the mixture.

  3. Peel the potato with the help of a spoon (or just with your hands if you can take the heat, but don’t hurt yourself!)

  4. Grab a plate or a bowl and mash the potato with a fork or a masher. Add some salt and continue mashing.

  5. Start adding the flour a bit at a time and mix with the potato until you get a dough. Make sure to work the flour into the potato well enough before thinking it’s too moist and add some more.

  6. Move the dough to a floured surface and divide it into 3 or 4 parts. Roll each part into sausage-shaped dough.

  7. Cut little pieces of dough (about 1inch) and make them into little balls. Then, lightly press each piece with your finger to give it a more gnocchi-like shape.

  8. Boil some water over the stove. Gently place the gnocchi into the boiling water and let them cook for 2 minutes. You’ll see them rising at the top when ready to take out.

  9. Take an oven tin and add the sauce at the bottom and mix in with the gnocchi. Here, you can add some vegan mozzarella or parmesan if you’d like. Cook in the oven at 200 degree for a few minutes to crisp up the top and melt the cheese.
