Super Easy VEGAN TUNA MAYO SANDWICH


Lately I’ve been eating vegan tuna sandwiches a lot, I like everything about it, the freshness, the crunchiness but most of all I like the fact that it take me 2 minutes to make and I can keep it into the fridge for about 4 days - making it a perfect snack when I am not sure what to eat and fancy something quick and easy!

This recipe is soooo easy to make, healthy, very inexpensive and a plant based alternative to fish. Your mix will have a nice crunchy texture and a tasty combination of flavours as we are going to use some nori sheets and soya sauce.This meal is also very nutritious and packed with protein as our main ingredients are chickpeas.

I can hear the skeptical say that it’s not going to be exactly like tuna - and yes you are right - but it has a super tasty seaweed flavour, thick and creamy texture and it makes a delicious sandwich

Let’s see how to make it!

See below what ingredients you need then mash them all up together - in no particular order and then spread them onto your fav bread. That easy? Yes that quick and simple. Like me, you can add little pieces of nori seaweed for a stronger ‘fishy’ taste, or only use red onions and capers, those two ingredients will give your mix a bit more flavour.

Ingredients

  • 1 can chickpeas - about 400g

  • 3 tablespoons vegan mayonnaise

  • 1 tablespoon red onion finely chopped

  • 10 capers finely chopped

  • 2 teaspoons nutritional yeast (optional)

  • 1 ½ teaspoons of soy sauce - or tamari sauce if you’d prefer

  • 1/2 teaspoon crumbled dried nori seaweed (optional)

  • Small pinch salt and pepper - I use smoked salt for my mix

  • 1 1 ½ teaspoons of freshly squeezed lemon juice

Instructions

  • Drain and rinse the chickpeas, then coarsely mash them with a fork into a bowl

  • Add all remaining ingredients and mix to combine

  • Serve on bread with salad leaves and tomatoes - or add vegan cheese like we do at Leles! Naughty x
