Lele's creamy Mac & Cheese

Did you miss us on stage at Vegan Life Live? Fear not, here is the recipe!

I love a good mac & cheese, who doesn't?! Here is a simple, easy recipe to make a delicious vegan mac & cheese full of flavours. You can follow the instructions or swap some of the vegetables for your favourites ones. Here we are using broccoli (yummy!), however a few weeks back we were on stage at Vegan Food Living and we used kale and cherry tomatoes instead! Just remember to shop what’s in season to keep the cost down and eat healthily.

What you need: it serves up to 8 people

1 finely chopped onion (I use a red onion)

4 tsp of smoked paprika

3 tsp of turmeric

3 tsp of oregano

30ml of garlic oil

150g of broccoli

4 tsp of salt and pepper (add more if necessary)

60ml of soya milk (you can use any plant based milk of your choice)

A handful of fresh parsley

A generous piece of vegan cheese chopped in little pieces

A handful of corn starch

1kg of pasta - I used macaroni

Oatly cream

1. Once the water is boiling, add the pasta and cook it for about 10 minutes. Don't overcook it as we will need to put it in the oven where it will still bake more.

2. Meanwhile in a food processor mix the following: garlic oil, milk, paprika, turmeric, salt, pepper, parsley, oregano, onion, corn starch and patly cream. You will obtain a nice creamy texture that looks pretty much like melted cheese!

3. In the oven roast the broccoli with a pinch of salt, pepper and garlic oil. Roast them at 160 for 10 minutes, take them out even though they might not be cooked yet, we just want them to get as flavours as possible.

4. Mix the pasta in a baking tray with the mixture you prepared in the food processor, add cheese, broccoli and mix again. Sprinkle some cheese, olive oil and parsley on top and cook for at least 10 minutes at 170 degrees.
