Simple Yummy Vegan Quiche

I love summer but I love autumn even more, the trees are beautiful and some of my favourite fruits and veggies come on season around September October. Here is a simple, easy recipe to make a delicious vegan quiche, packed with protein and full of flavours. You can follow the instructions or swap some of the vegetables for your favourites ones, just remember to shop what’s in season to keep the cost down and eat healthily. For the pastry: You can alternatively buy an already made short crust pastry from any supermarket 230gr plain flour 100gr of vegan margarine pinch of salt and black pepper to taste For the filling: 1 finely chopped onion (I use a red onion) 3 medium leeks one medium butter

Superfood Autumn Salad

This is the time of the year when it almost feels like winter but I still want to dream of hot summer days, iced lattes and ice-cream, so to fool myself I try to eat as many yummy salads as possible - but I like mine to really fill me up and give me lots of energy to keep me going all day, especially when I am working at Lele's and I am on my feet all day! My No Shopping Challenge!

So this is it, I am putting money where my mouth is or perhaps I should say I am saving money really though. Last Saturday I made a chocolate and mango cake with nine layers all with vanilla and mango cream in between.....boy was it tasty and boy was it tiring!
